Hemp hearts contain two primary proteins: edestin (about 65% of total protein) and albumin (about 35%). Edestin is a hexameric globular protein, six identical subunits in a compact, easily digestible structure. Its composition closely resembles the globular proteins in mammalian blood plasma and immune cells, making it highly recognisable to canine digestive enzymes and giving it an unusually high digestibility compared to most plant proteins. The ratio of omega-6 to omega-3 profoundly influences the body's inflammatory tone.
